Milanese a little healthier.

  • 2 large eggplants
  • 150 gr of flour
  • 3 eggs
  • 500 gr of breadcrumbs
  • 8 tbsp ketchup
  • 300 ml of oil
  • 150 gr cooked ham
  • 150 gr of mozzarella
  • Oregano to taste
  • Salt to taste

  1. Cut the eggplants lengthwise, 1 cm thick. Leave in colander with a touch of coarse salt.
  2. Wash with water, dry and pass through flour, egg and breadcrumbs.
  3. On each Milanese place a spoonful of tomato sauce, half a feta of ham and mozzarella cheese.
  4. Bring to gratin in the oven.
  5. Sprinkle with oregano and serve.
