Sour Cream Enchiladas

Sour Cream Chicken Enchiladas - Easy to make and absolutely delicious! Rich, creamy and great for any night of the week!


  • 1 large chicken breast
  • 1 Tbls taco seasoning
  • 1/4 onion, diced
  • 1 1/2 cup sour cream
  • 1 1/2 cups Cheddar Cheese
  • 8 small tortillas
  • 2 (10 oz) cans enchilada sauce


  1. Preheat oven to 350 degrees.
  2. Season chicken breast with taco seasoning. Bake for 25-30 minutes or until cooked through. Remove from oven and shred.
  3. Combine chicken, onion, sour cream and 1 cup of cheese in a bowl.
  4. Fill tortillas with chicken mixture. Roll, and place seam side down in a 13 x 9 baking dish that has a small amount of enchilada sauce coating the bottom.
  5. Pour over the rest of the enchilada sauce. Cover with foil and bake for about 35 minutes, until bubbly and warm.
  6. Uncover, sprinkle with remaining cheese. Return to the oven for 5 minutes, or until cheese is melted.
  7. Allow to cool for 5 minutes before serving (makes them easier to remove from the pan).
